Coastal Spring Lamb Cooking Tips

These handy tips will ensure you get great results with our lamb every time.

  • Always take your lamb out of the fridge about an hour before you're ready to cook it. Season with a sprinkle of salt and a few grounds of pepper.
  • Always ensure that your oven, pan or BBQ is hot before you add your lamb.
  • As soon as you remove your lamb from the heat, place it on a warm plate, cover loosely with foil or a damp tea towel and rest it before carving and serving.
  • Always carve lamb across the grain.

 

Leg, Carvery Leg, Shoulder Roast   R
Pre heat oven to 200˚C and then Roast for 90 minutes.
Remove lamb to a warm plate, cover and rest for 20 minutes. Carve across the grain.  

 

Butterflied Leg, Butterflied Shoulder B
Brush lamb with oil and season with salt and pepper. Preheat BBQ grill and hot plate. Cook fat side down for 15 minutes on the grill.  Turn and cook meat side down on the plate for 15 minutes. Remove to a warm dish, cover loosely with foil, rest for 15 minutes. Carve across the grain. 

 

Shoulder Chop B / PF / SC
Fry, BBQ - Brush lamb with oil and lightly season with salt and pepper. Cook in a hot pan or BBQ plate for 5 minutes each side.  Transfer to a warm plate and rest before serving.

Slow Cooker - dust with flour, brown in a hot fry pan, put in slow cooker with stock (allow 1C stock per 1kg meat) and cook as per slow cooker recipe / instructions.

 

Shank R / SC  Best cooked slowly
Slow Cooker - dust with flour, brown in a hot fry pan, put in slow cooker with stock (allow 1C stock per 1kg meat) and cook as per slow cooker recipe / instructions.  

Roast - brush with oil, season and roast at 150˚C for a couple of hours.

 

Rack R / B
Preheat oven and tray to 200˚C. Season lamb with salt and pepper.
Sear lamb on both sides in a hot fry pan to seal in the juices, and then roast in oven for 12 minutes. Remove to warm plate, cover and rest for 8 -10 minutes.

 

Leg Steak PF/ B
Brush lamb with oil and lightly season with salt and pepper. Fry in a hot pan or on BBQ plate - 2 minutes each side for medium rare, 3 minutes for well done.

 

Rump R / B
Preheat oven and tray to 200˚C. Brush lamb with oil and lightly season with salt and pepper.  Sear in a hot pan on both sides to seal in juices and maximize flavour. Put in oven and roast for 12 mins med rare. Remove to warm plate, cover and rest for 8 -10 minutes.

 

Loin chop B / PF
Brush lamb with oil and lightly season with salt and pepper. Place under medium high grill for 10 minutes or cook on BBQ hot plate - 3 minutes each side for medium rare, 5 minutes for well done.

 

Boneless Loin B / PF
Brush with oil.  Season with salt and pepper.
Sear on two sides in a hot pan or BBQ hot plate for a couple of minutes (total). Then cook 2 - 3 mins on each side. Remove to warm plate, cover and rest for 8 -10 minutes.

 

Tenderloin B / PF
Cook quickly in a very hot pan - 2 to 3 minutes total. Rest on a warm plate for 3 - 5 minutes before serving.
